Coravin: Technology in Your Glass

Any wine drinker has had the problem of an unfinished bottle. Maybe you opened it for a post-work glass on Thursday and it’s still sitting half-full on your counter Tuesday. Once a bottle of wine is opened, it starts to oxidize; the chemical compounds in the wine react with air. After time, it loses its freshness, color, and flavor. There are ways of keeping this from happening—for instance, cold air (like your fridge) slows down the process. The Coravin system aims to prevent the problem from happening in the first place.

IMG_0518-3Greg Lambrecht, the creator of the Coravin, spent ten years developing the technology. A lifelong wine lover with a background in physics and medical device engineering, he wanted to create a way to have a glass of wine without having to commit to opening the whole bottle. The Coravin clasps onto the neck of the bottle and inserts a superthin needle through the cork. Inert argon gas is pumped into the bottle, and the difference in pressure causes the wine to flow up through the needle and into your glass. The wine left inside is then covered with a layer of argon, meaning no oxygen has been introduced throughout the process and the wine is left to age normally.

For collectors, the Coravin system lets you check on the aging process of the wines in your cellar. You can sample a bottle to see if it is at its peak, and then return it to your wine rack to check another time. It is also perfect for those who love variety but just want one glass a night, as it lets you work on several bottles of wine at the same time without worrying if the wine will go bad before you can revisit it. Or, if you want a glass of Sauvignon Blanc with dinner, but your partner wants Pinot Noir, no one has to compromise! It’s also perfect for the (rapidly approaching) holiday seasons, as it makes a great gift for a wine drinker or collector.
